In Bulgaria, most people head to Black Sea beaches in summer. You'll find the locals love Sozopol over Sunny Beach. Sofia's churches are great to see, and Plovdiv's hill streets has all the hidden art shops. Mountains work for hiking in summer and skiing in winter. Take buses between towns, they're cheap and run often. Try the local rakija but watch out - it's stronger than you think. Food here means grilled meat and fresh salads.
